Cavatappi with Smoked Norwegian Salmon and Sundried Tomatoes

Ingredients

  • 4oz dry cavatappi pasta (cooked al dente)
  • 2oz sundried tomatoes (julienned)
  • 2oz smoked Norwegian salmon
  • 1/2 cup broccolini (blanched left whole)
  • 2oz cherry tomatoe (cut in half)
  • 1 cup yellow zucchini (cut in half circles blanched)
  • 1/4 cup red onion (julienned)
  • 1 tablespoon garlic (minced)
  • 1/2oz fresh basil leaves (whole )
  • 1oz fresh parmesan cheese (grated)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper (ground)
  • 3 tablespoons olive oil

Directions

Step 1
In a sauté pan over medium heat, sweat the garlic in olive oil. Add the onions and brown lightly. Once the onions are browned, add the rest of the vegetables with sundried tomatoes and basil. Toss until warm. Add the pasta and salmon and season with salt and pepper. Garnish with the parmesan cheese.
