Spicy Seared Mahi Mahi “Burgers” with Marinated Cabbage and Cilantro Mayonnaise

Ingredients

  • 4 8 oz. Mahi Mahi Filets
  • 2 tablespoons blackening spice
  • 2 tablespoons cilantro (chopped)
  • 3 limes
  • 1/2 cup mayonnaise
  • 2 cups cabbage (shredded)
  • 1/4 cup red pepper (julienned)
  • 1/4 cup red onion (julienned)
  • 4 soft rolls
  • 1 teaspoon salt
  • 1 teaspoon olive oil

Directions

Step 1
Heat cast iron pan to about 400 degrees.
Step 2
Mix mayonnaise with the juice form 1⁄2 of one lime and the chopped cilantro, set aside. Toast the top and bottom of the soft rolls.
Step 3
Mix the cabbage with the other vegetables, the juice of 1 and half lime and the salt, set aside.
Step 4
Lightly season all four Mahi Mahi filets with the blackening spice. Rub one side (the presentation side) with olive oil and place filets oil side down in hot pan. We do not want to “blacken” the fish so if the pan is too hot, turn down the heat and pull the pan off the heat to cool for a second or two. You want a nice even dark brown sear on the fish. Cook on each side for about 2 minutes. Spread mayonnaise on both sides of the roll. Put cooked fish on the roll and top abundantly with the marinated cabbage, serve with a
lime wedge.
