Tortellini TriColore with Sausage and Pepper

  • 4lb Tricolor tortellini
  • 2 1/2lb Mild (or Spicy) Italian Sausage (sliced in 1” coins)
  • 1 Medium Green Bell Pepper (sliced)
  • 1 Medium Red Bell Pepper (sliced)
  • 1 Medium Yellow Onion (sliced)
  • 2 tablespoons garlic (chopped)
  • 1 quart Diced Stewed Tomatoes


Step 1
Sauté the sausage, onion, and peppers until the vegetables are soft and the sausage is parcooked. Add the garlic and cook 1 minute before adding the tomatoes. Bring to a boil then reduce to a simmer for 15 minutes.
Step 2
Cook the tortellini until they are al dente. Toss with sauce. Top with grated parmesan cheese if desired.
